The usual association, when someone mentions crepes, is something sweet, but we are offering here something a little bit different. The different shape and the different taste should be a sufficient reason for you to try to make these.
Ingredients:

| 1 com | egg |

| 285 ml | milk |
| 115 g | flour |
| 2 com | eggs |
| 1/4 teaspoon | salt |
| Filling: | |
| 1 com | red onion |
| 450 g | eggplants |
| 1 com | red pepper |
| 1 clove | garlic |
| 1 teaspoon | coriander |
| 3 com | tomatoes |
| 1 tablespoon | salt |
| to taste | pepper |
| 1 tablespoon | olive-oil |
Crepes
Sieve flour into a bigger bowl and, then, make a hallow in the middle of the bowl. Add the eggs and half of the amount of milk and beat until smooth.

Add the rest of the milk beating constantly.

Add salt and pepper and beat again.

Fry the crepes from the prepared dough.

Preparation
Peel eggplant and cut it into small cubes.

Put the minced eggplant into an adequate bowl and salt it.

Peel and clean red onion and cut it into small pieces.

Peel one clove of garlic and mince it.

Clean red pepper, remove the seeds and cut the pepper into small cubes.

Peel tomatoes, remove the seeds and cut the tomatoes into small cubes, too.

Filling
Warm up olive oil in a middle size dish.

Add onion and fry it briefly.

Add red pepper and fry for 5 minutes.

Add tomato, garlic and eggplant.

Season with one teaspoon of cilantro and a little bit of ground pepper and cook all on a medium temperature (without adding any liquid) about 30 minutes or until all the liquid evaporates.

Breading and baking
Put 1/12 of the prepared filling at the center of every crepe.

Make a package from the crepe like it is shown at the photo.

Cover a baking dish with aluminum folio.

Coat the crepes first in beaten egg and, then, in breadcrumbs.

Put the crepes in the baking dish and bake them at 200°C about 20 minutes until golden brown.

Serving
Serve the crepes warm.
