Macaroni and Cheese
As you probably know, the site already has a recipe with macaroni and cheese: the baked version most common in our region, and incredibly tasty. Today we bring you the version that is far more common elsewhere, and trust us, you will love it. It is quicker to make, needs no oven, and the macaroni turn out juicier and tastier!

Cooking the macaroni

Grate the cheese in advance, because later you will not have time.

Heat water in a medium-sized pot and salt it well. When the water boils, add the macaroni. Follow the cooking time for the pasta, which is always given on the packet.

Tip: Cook the macaroni until they are about 80 per cent done. They will finish cooking later, once you move them into the pot with the sauce. That way they do not overcook when mixed with the hot sauce.

While the macaroni are cooking, carry on.
Melt the butter in a medium-sized pan over low heat. Add the flour and cook gently for 2–3 minutes.

When the roux is ready, pour in a small amount of the milk, about ¼ of the total, and stir quickly. Keep stirring until the mixture is smooth. Gradually add the rest of the milk, stirring all the time.

Turn up the heat until the milk comes to the boil, then cook the sauce for a few more minutes.

Tip: The longer you cook it, the more water evaporates and the thicker your sauce becomes. The sauce should not be too thick.

Add the cheese and stir until it melts.

Finally, add the macaroni and stir. If the macaroni are not fully cooked, the heat of the sauce will finish them; if necessary, cook the mixture on the hob a little longer.

Tip: Now you can taste the macaroni to see whether they are fully cooked and whether they need more salt or pepper.

Season with salt and pepper to taste.
