Mushroom Stew
Mushroom dishes are so popular that the usual story is: however much you make, more would have been eaten. Here is a recipe that gives you quantity without losing flavor or quality.

Peel the onion and dice it.

Clean the mushrooms and cut them into large pieces.

Tip: It is very important to cut the mushrooms coarsely: larger ones into 4 pieces, smaller ones into 2.

Heat the oil in a pot of suitable size.

When the oil is hot enough, add the diced onion and fry until lightly golden (about 10 minutes). Add the mushrooms and stew them until soft.

Tip: The mushrooms release their own juice as they stew, so you usually need to add no water, or only a very little. Either way, stir them often so they don't burn.

Add the paprika and, if you like, the chili to the stewed mushrooms.

Add the bay leaf.

Add the tomato juice. Cook the stew for about 10 minutes, stirring occasionally. If it is too thin, add a teaspoon of cornstarch.
