Plum Dumplings
The best thing you can make from plums is, without a doubt, plum brandy. But if you have rather fewer plums than a batch of brandy needs, there is no better (or tastier) way to use them than this lovely old-fashioned treat.

Preparation

Peel the potatoes and boil them in salted water.

Tip: Floury white potatoes are best, because they break down more smoothly in the dough.

When the potatoes are cooked through and soft, drain them and mash them well.

While the potatoes are still warm, add the margarine and work it in well, then leave to cool a little.

Tip: Let the potatoes cool before you go on, so the eggs don't start to cook on the hot mash.

Add the eggs to the potatoes and mix well.

Add the flour gradually and mix (knead) until the dough is smooth.

Flour the work surface well (so the dough doesn't stick) and knead the dough a little more.

Dust the dough with flour too and roll it out with a rolling pin to about 1 cm thick.

Cut the dough into squares large enough to wrap a plum in.

Wrap a plum in each square and shape the dumpling between your palms.

Tip: If you are a little more skilled, take the stone out of the plum and fill the hollow with a little sugar mixed with cinnamon.
Boiling and coating

Salt the water and bring it to a boil.

Drop the dumplings into the boiling water and cook them for about half an hour, until they float to the surface.
Tip: Make sure the dumplings don't stick to the bottom of the pot when you drop them in. If they do, just loosen them with a wooden spoon.

Heat the oil well, add the breadcrumbs and fry them until they darken slightly.

Add the sugar and mix well.

Tip: If you like, add cinnamon to this mixture too.

Roll the boiled, drained dumplings in the breadcrumbs on all sides, arrange them in a bowl and sprinkle with the remaining crumbs.
