Onion Rings
The first dish on our site that comes from the United States, known as onion rings. If you have not tried it in a fast-food restaurant yet, the mild, sweetish, crunchy taste of the onion will surprise you.

Preparing the onion

Cut the onion into rings 5–10 mm wide, no thinner. Carefully separate the layers of each slice. Use large onions; ideally they should be as regular in shape as possible, almost round, so that the rings turn out nice and even.

Put the wheat flour into a deep bowl and add the corn flour.

Tip: Always follow the rule that, with powdery and liquid ingredients, you mix the powders first and then add the liquid gradually, stirring, to get a smooth batter without lumps.

Then add the cornstarch.

Add the baking powder and the salt.

Add the nutmeg and then the chili powder or, if you are not fond of heat, replace the chili with paprika. Paprika gives the onion a nice reddish colour.

Tip: Because of the baking powder, always mix the ingredients well.

Add the egg and stir, or beat the egg into the milk and add it to the flour that way.

Gradually add a little milk, stir well to break up all the lumps, and repeat until all the milk is used. The batter should be thicker than pancake batter, so if yours is runnier, add more cornstarch. Leave the batter to stand for about 10 minutes; it is not essential, but recommended.

Pour oil into a frying pot and heat it to medium-high.
Drop a few rings into the batter.Tip: If you fry at a very high temperature, the batter darkens quickly and the onion does not cook through: it stays half raw and sharp instead of pleasant and sweetish.

Add the rings one by one, taking care that they do not touch.

After a minute or two, turn the rings and carry on frying. Put the fried onion on kitchen paper to soak up the excess fat.

Serve them warm with fish, or simply eat them as a snack with tartar sauce.
