Choosing and cleaning the pineapple
-
4
To check whether a pineapple is ripe, gently pull one of the central leaves. If it comes out easily, the pineapple is ripe.

5
Stand the pineapple on a firm surface, hold it with one hand and twist the leaves with the other until they come away from the fruit.

Tip: Before you start cleaning the pineapple, leave it in the fridge for about half an hour, preferably upside down (leaves pointing downwards). A pineapple usually stands upright, so all its juices run to the bottom; this way they spread evenly through the whole fruit again.
-
6
Cut off both ends of the pineapple, 1–1.5 cm thick.

7
Cut away the skin piece by piece, working round, until it is all removed.
-
8
Remove the remaining bits of skin with the tip of the knife.
-
9
Cut the pineapple into slices about 1.5 cm thick.

If you like, remove the core too. Lay a slice on the board, cut round the core with a sharp knife and simply push it out.

Tip: The core is a little harder and a little less sweet than the rest of the fruit. If that does not bother you, you need not remove it.

11
Finally, cut the pineapple into small cubes.
