Schupfnudeln (Potato Dumplings)

If you have learned to make plum dumplings, schupfnudeln will be no trouble. The dough is made in exactly the same way; the difference, apart from the strikingly different shape, is that schupfnudeln can be made sweet or savoury, so it is up to you whether you want a traditional dessert or an old-fashioned side dish. And if you have not learned to make the dumplings – well, hurry up!

Schupfnudeln (Potato Dumplings)

Preparation

  1. 1

Peel the potatoes and boil them in salted water.

Tip: White potatoes are better, because they break down more nicely in the dough.

  2. 2

When the potatoes are cooked, that is, when they are soft, drain them and mash them well.

  3. 3

While the potatoes are still warm, add the margarine and work it in well, then leave them to cool a little.

Tip: The potatoes must cool before you go on, so that the eggs do not partly "cook" on the hot potato.

    Step 3
  4. 4

Add the eggs to the potatoes and mix well.

Gradually add the flour and mix (knead) until the dough is even.

Tip: Add as much flour as it takes to make a dough that does not stick to your fingers.

    Step 5 (1/2)
    Step 5 (2/2)
  6. 6

Dust the work surface well with flour (so the dough does not stick) and knead the dough a little more.

  8. 8

Shape the pieces into little rolls.

Cooking the schupfnudeln

  1. 9

Salt the water and bring it to the boil.

    Step 9
  2. 10

Drop the schupfnudeln into the boiling water and cook them for about half an hour, that is, until they float to the surface.

Tip: Take care that they do not stick to the bottom of the pot when you drop them into the boiling water. If it does happen, just loosen them with a wooden spoon.

    Step 10

Preparing the breadcrumbs

  1. 11

Heat the oil well, add the breadcrumbs and fry them until they darken a little.

Tip: Since schupfnudeln can also be made as a sweet dish, you can add sugar and cinnamon to the breadcrumbs.

    Step 11 (2/2)
  2. 12

Roll the cooked and drained schupfnudeln in the breadcrumbs on all sides, arrange them in a bowl and sprinkle with the remaining breadcrumbs.
